Easy Greek Cheese pie from Paros.
This is so easy to make, no filo needed. Crunchy on the outside and gooey cheesy on the inside.
This recipe is from one of my favorite Greek chefs Argiro Barbarigou. For Argiro, a mothers cooking means familiar flavors, glorious tastes, openhandedness, warmth and unconditional love. It is these ideals that she has shared in all her recipes, and this is one of them.
Ingredients
1/3 cup olive oil (a little extra for the baking tray)
1/2 cup sesame seeds
100gms Greek Yogurt
350gms self-raising flour
400mls milk or water
350gms Feta cheese
Black cracked pepper
Baking paper a little larger than your baking tray
How to make:
-Heat Oven 180C
-Place baking tray approx. 25cm x 35cm into oven to heat up while you make the mix.
-Mix all the ingredients (except Feta cheese) in a big bowl till you get a nice thick mixture.
-Now, crumble in the Feta cheese into this mix.
-Take your piece of baking paper dampen it with water and then crunch it up. This way you can easily line your pan.
-Take hot tray out of the oven.
-Spread out your baking paper over the hot tray and drizzle some olive oil all over it.
-Sprinkle 1/4 cup of sesame seeds over oil.
-Pour your mix onto tray over sesame seeds. Drizzle some more olive oil.
-Add the remaining sesame seeds on top.
-Bake for about 45- 50 mins in the middle rack of oven until golden and crunchy.
Have it warm or cold with a Greek salad.
